‘Book Ends’ Cabernet Sauvignon

Our best blocks of Cabernet Sauvignon are reserved for the ‘Book Ends’. 2019 was a cooler and more challenging season but fortunately we have number of blocks planted to Cabernet and we could select the best parcels of fruit from the warmer sites on the Karri Oak and Windy Hill vineyards in Mt Barker. A touch of Frankland River Malbec (2%) added to the final blend. The batches of fruit were all fermented separately with regular pump overs to maximise colour and flavour extraction. A portion was then left on skins post ferment before all being matured in French oak barriques, approx 30% new, for 18 months.

COLOUR

Dark and dense crimsony red.

AROMA

With 18 months bottle age before release, it is well integrated on the nose with rich aromas of red berry and dark berry/blackcurrant fruits and all complexed by the cedar/tobacco characters from its maturation in French oak.

PALATE

With its rich dark berry fruit flavours and great tannin structure, our ‘Book Ends’ is a classic Great Southern Cabernet Sauvignon. It has the typical red berry fruits and some ‘bramble’ berry and blackcurrant/ cassis flavours together with a slight ‘dusty’ character from its period of oak maturation to add to its complexity. It has cedary notes and a touch of spice along with a hint of varietal dried herb character which all makes for a great wine to match with food! With its gently drying, slightly chewy tannins, it has great persistence and palate length and will age well.

CELLARING POTENTIAL

Medium bodied, our ‘Book Ends’ Cabernet can be enjoyed now with many foods, it will also reward further cellaring as it continues to develop over the next 6 ++ years.
