‘Book Ends’ Cabernet Sauvignon
Our very best blocks of Mt Barker Cabernet Sauvignon are reserved for this wine. For this vintage we selected fruit from the Karri Oak, Langton and Windy Hill vineyards. It was generally a cooler season and the harvest commenced later than usual. The Cabernet is always the last to ripen and we kept a very close eye on it as the timing was crucial in making sure it was flavour perfect. The batches were then fermented separately with regular pump overs to maximise colour and flavour extraction. A portion was then left on skins post ferment before being matured in French oak barriques, 30% new, for 18 months. Prior to bottling we added a touch of Malbec to our Book Ends for extra richness and complexity.
A deep and vibrant crimsony red.
Reminiscent of a delicious black forest cake, this has some very attractive ‘chocolatey’ aromas and hints of sweet vanilla along with the dense dark plum and complex berry fruits that are typical of Cabernet Sauvignon.
Our ‘Book Ends’ is beautifully balanced with its rich fruit and superb texture. Its blackberry fruit flavours and dark chocolate characters are complexed by hints of sweet smokiness from the French oak. The good depth of flavour is well balanced by a gentle acidity and the slightly chewy, gently drying tannins contribute to its great persistence and palate length.
This is a medium bodied Cabernet Sauvignon that can be enjoyed now with many foods. It will, however, definitely reward further cellaring as it will continue to develop over the next 6 ++ years.
