It is over 50 years since the first vines were planted in Mount Barker and Cabernet Sauvignon has proven to be the King of the reds. Our’King Billy’ displays the unquestionable qualities of classic, old vine Cabernet Sauvignon. Well flavoured and well structured, this is a mature wine that will reward further cellaring. Only four barriques produced; 100 dozen bottled.

Winemaking Information:*** SOLD OUT *** This wine has been many years in the making. In 2012, our best parcels of Cabernet from the most mature vines at the Langton and Windy Hill vineyards were selected for our ‘Book Ends’ Cabernet Sauvignon. Once it went to barrel, there was a further assessment with four of the very best barriques being designated as ‘King Billy’ material. After maturation in new French oak for 16 months, the wine was bottled in December 2013 and allowed to mature in bottle for nearly 3 ½ years before being labelled for release. Extended maturation in bottle rather than in oak has ensured that this wine has retained its vibrant fruit while developing its secondary characters and still has further capacity for cellaring.
Colour:Attractive deep dark garnet red.
Aroma:Restrained and well integrated black fruit aromas of ripe blackcurrant with hints of dark plum and black olive.
Palate:Has a seamless and beautifully balanced palate with the dusty, rich blackberry fruit flavours well integrated with the subtle oak characters. This wine has a beautiful, elegant structure with the restrained, silky tannins giving great line and length to the palate.
